Day 17 - square omelette
Who'd have thought you could make omelette in the oven? This is a roasted allotment veg fritatta which has parsnips, leek and beetroot from the allotment as well as a bit of squash and carrot. The white things are salsify, also from the allotment but they would have been a bit lost in with the other veg I think. This has been one of my favourites so far - I can definitely see me doing this recipe after the challenge is complete and we're back to eating meat.
